Ingredients

  • 2 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter
  • ¾ cup buttermilk
  • 1 lb pork sausage
  • ¼ cup all-purpose flour
  • 2 cup whole milk
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional)

Steps

  1. Preheat oven to 425°F (220°C). In a large bowl, whisk together 2 cups flour, baking powder, and 1/2 tsp salt.
  2. Cut cold butter into small pieces and cut into the flour mixture using a pastry blender or your fingers until crumbly. Stir in buttermilk until just combined to form a soft dough.
  3. Turn dough onto a lightly floured surface and gently knead a few times. Roll or pat to 1/2-inch thickness and cut out biscuits using a 2-inch round cutter. Place on a baking sheet.
  4. Bake biscuits for 12-15 minutes, or until golden brown.
  5. While biscuits bake, cook sausage in a large skillet over medium heat, breaking it apart with a spoon, until browned. Drain excess grease.
  6. Sprinkle 1/4 cup flour over the cooked sausage and stir well, cooking for 1-2 minutes. Gradually whisk in milk, stirring constantly to prevent lumps.
  7. Bring gravy to a simmer, then reduce heat and cook, stirring occasionally, until thickened (about 5-7 minutes). Season with black pepper and optional cayenne pepper.
  8. Serve hot biscuits split and smothered with warm sausage gravy.
