Ingredients

  • 30 oz black beans
  • ½ red onion
  • 2 clove garlic
  • ½ bell pepper
  • ¾ cup bread crumbs
  • 1 egg
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 4 burger buns
  • 4 leaf lettuce (optional)
  • ½ tomato (optional)
  • ½ avocado (optional)

Steps

  1. Drain and rinse black beans. Mash them in a large bowl, leaving some whole for texture.
  2. Finely dice the red onion, garlic, and bell pepper.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the diced vegetables until softened, about 5-7 minutes.
  4. Add the sautéed vegetables, bread crumbs, egg, cumin, chili powder, salt, and pepper to the mashed black beans. Mix well to combine.
  5. Form the mixture into 4 patties.
  6. Heat the remaining 1 tablespoon of olive oil in the skillet over medium heat. Cook the patties for 4-5 minutes per side, until browned and heated through.
  7. Serve the black bean burgers on buns with desired toppings like lettuce, tomato, and avocado.
