Blackened Cod
Flaky cod fillets are seasoned with a bold blend of spices and seared to perfection, creating a crispy exterior and tender interior.
Ingredients
- 1½ lb cod fillets
- 4 tbsp unsalted butter
- 1 tbsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp cayenne pepper (optional)
- ½ tsp black pepper
- ½ tsp salt
- 2 lemon wedges (optional)
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Pat the cod fillets very dry with paper towels. In a small bowl, combine paprika, onion powder, garlic powder, dried thyme, dried oregano, cayenne pepper (if using), black pepper, and salt.
- Melt 2 tablespoons of butter in a large cast-iron skillet over medium-high heat until it begins to smoke slightly.
- Dip each cod fillet into the remaining melted butter, then dredge liberally in the spice mixture, ensuring an even coating.
- Carefully place the seasoned cod fillets into the hot skillet. Cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork, and a dark, crusty 'blackened' sear has formed.
- Remove the cod from the skillet and transfer to a serving platter.
- Serve immediately with lemon wedges and a sprinkle of fresh parsley, if desired.
