Ingredients

  • 1½ lb cod fillets
  • 4 tbsp unsalted butter
  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper (optional)
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 lemon wedges (optional)
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Pat the cod fillets very dry with paper towels. In a small bowl, combine paprika, onion powder, garlic powder, dried thyme, dried oregano, cayenne pepper (if using), black pepper, and salt.
  2. Melt 2 tablespoons of butter in a large cast-iron skillet over medium-high heat until it begins to smoke slightly.
  3. Dip each cod fillet into the remaining melted butter, then dredge liberally in the spice mixture, ensuring an even coating.
  4. Carefully place the seasoned cod fillets into the hot skillet. Cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork, and a dark, crusty 'blackened' sear has formed.
  5. Remove the cod from the skillet and transfer to a serving platter.
  6. Serve immediately with lemon wedges and a sprinkle of fresh parsley, if desired.
