Ingredients

  • 1½ lb boneless pork chops
  • 2 apples
  • ½ onion
  • 2 clove garlic
  • ½ cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh thyme
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Pat pork chops dry and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  3. Add sliced apples and chopped onion to the skillet. Cook for 5-7 minutes, stirring occasionally, until softened.
  4. Stir in minced garlic and fresh thyme; cook for 1 minute until fragrant.
  5. Pour in chicken broth and apple cider vinegar. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Return pork chops to the skillet, spooning the apple mixture over them. Cook for 1-2 minutes to heat through.
  7. Serve immediately, garnished with extra fresh thyme if desired.
