Pan-Seared Pork Chops with Apples

Ingredients
- 1½ lb boneless pork chops
- 2 apples
- ½ onion
- 2 clove garlic
- ½ cup chicken broth
- 1 tbsp apple cider vinegar
- 1 tsp fresh thyme
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Pat pork chops dry and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- Add sliced apples and chopped onion to the skillet. Cook for 5-7 minutes, stirring occasionally, until softened.
- Stir in minced garlic and fresh thyme; cook for 1 minute until fragrant.
- Pour in chicken broth and apple cider vinegar. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return pork chops to the skillet, spooning the apple mixture over them. Cook for 1-2 minutes to heat through.
- Serve immediately, garnished with extra fresh thyme if desired.
