Broccoli & Stilton Soup

A creamy and comforting British soup featuring tender broccoli and the distinctive tang of Stilton cheese.

Ingredients

  • 2 tbsp canola oil
  • 1 onion
  • 1 celery stalk
  • 1 leek
  • 1 medium potato
  • 1 tbsp butter
  • 1 liter vegetable broth
  • 1 head broccoli
  • 140 g Stilton cheese
  • ½ tsp black pepper (optional)

Steps

  1. Heat oil in a large saucepan over medium heat. Add onion and cook until soft, about 5-7 minutes.
  2. Add celery, leek, potato, and butter to the saucepan. Stir until butter melts, then cover and sweat for 5 minutes.
  3. Pour in the hot vegetable broth and add any thick broccoli stalk pieces. Simmer for 10-15 minutes until vegetables are tender.
  4. Add the remaining broccoli florets and cook for another 5 minutes.
  5. Carefully transfer the soup to a blender and blitz until mostly smooth.
  6. Return soup to the saucepan, stir in the Stilton cheese, allowing some lumps to remain. Season with black pepper and serve hot.
