Turkey Meatloaf
A hearty and flavorful British-style turkey meatloaf baked with cannellini beans and topped with a tangy barbecue glaze.
Ingredients
- 1 tbsp olive oil
- 1 large onion
- 1 clove garlic
- 2 tbsp Worcestershire sauce
- 3 tsp tomato paste
- 1⅛ lb ground turkey
- 1 large egg
- ⅓ cup breadcrumbs
- 4 tbsp barbecue sauce
- 28 oz cannellini beans
- 2 tbsp fresh parsley (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 350°F (180°C). Heat olive oil in a large frying pan over medium heat and cook the chopped onion for 8-10 minutes until softened.
- Add minced garlic, Worcestershire sauce, and 2 tsp of tomato paste to the pan with the onion. Stir to combine and set aside to cool.
- In a large bowl, combine ground turkey, egg, breadcrumbs, and the cooled onion mixture. Season well with salt and pepper. Mix thoroughly and shape into a rectangular loaf.
- Place the meatloaf in a large roasting tin. Spread 2 tbsp of barbecue sauce over the top and bake for 30 minutes.
- While the meatloaf bakes, drain one can of cannellini beans. Combine both cans of beans (one drained, one undrained) in a bowl with the remaining 2 tbsp barbecue sauce and 1 tsp tomato paste. Season with salt and pepper.
- After 30 minutes, remove the meatloaf from the oven. Scatter the seasoned cannellini beans around the outside of the meatloaf in the roasting tin.
- Return to the oven and bake for another 15 minutes, or until the meatloaf is cooked through and the beans are hot.
- Garnish with fresh parsley, if desired, and serve the meatloaf in slices with the beans.
