A classic British comfort food featuring savory sausages baked in a fluffy Yorkshire pudding batter, with a hint of horseradish and sweet cherry tomatoes.
Ingredients
- 8 pork sausages
- 3 tbsp vegetable oil
- ¾ cup all-purpose flour
- 2 eggs
- 1 tbsp horseradish (optional)
- 1 cup milk
- ½ lb cherry tomatoes (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 400°F (200°C).
- Brown sausages in a non-stick pan over medium-high heat for 5-7 minutes; set aside.
- Drizzle vegetable oil into a 9x12 inch (approx. 30x25cm) roasting tray and heat in the oven for 5 minutes.
- In a bowl, whisk together flour, eggs, horseradish (if using), milk, salt, and pepper until smooth.
- Carefully place the browned sausages into the hot roasting tray. Pour the batter over and around the sausages.
- Scatter cherry tomatoes over the batter, if desired.
- Bake for 30-35 minutes, or until the batter is puffed, golden brown, and cooked through. Serve immediately.
