Cajun Chicken Pasta

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 2 bell peppers (red, yellow, or orange)
  • 1 onion
  • 4 clove garlic
  • 1½ cup heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese, grated (optional)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Cook fettuccine according to package directions. Drain, reserving 1/2 cup of pasta water, and set aside.
  2. Cut chicken into 1-inch pieces. Dice bell peppers and onion. Mince garlic. Season chicken with 1 tablespoon of Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add bell peppers and onion to the same skillet and cook until softened, about 5-7 minutes. Add minced garlic and remaining Cajun seasoning, cook for 1 minute more until fragrant.
  5. Pour in chicken broth and heavy cream, bringing the mixture to a simmer. Stir in the cooked chicken. If desired, add Parmesan cheese and stir until melted and smooth.
  6. Add the cooked fettuccine to the skillet and toss to coat. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.
  7. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
