Cajun Chicken Pasta
A creamy and spicy pasta dish featuring tender chicken and vibrant bell peppers, all coated in a rich Cajun-spiced sauce.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 12 oz fettuccine pasta
- 2 bell peppers (red, yellow, or orange)
- 1 onion
- 4 clove garlic
- 1½ cup heavy cream
- ½ cup chicken broth
- ½ cup Parmesan cheese, grated (optional)
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Cook fettuccine according to package directions. Drain, reserving 1/2 cup of pasta water, and set aside.
- Cut chicken into 1-inch pieces. Dice bell peppers and onion. Mince garlic. Season chicken with 1 tablespoon of Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add bell peppers and onion to the same skillet and cook until softened, about 5-7 minutes. Add minced garlic and remaining Cajun seasoning, cook for 1 minute more until fragrant.
- Pour in chicken broth and heavy cream, bringing the mixture to a simmer. Stir in the cooked chicken. If desired, add Parmesan cheese and stir until melted and smooth.
- Add the cooked fettuccine to the skillet and toss to coat. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.
- Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
