Ingredients

  • 2 lb pork shoulder
  • 1½ cup apple cider vinegar
  • ½ cup water
  • 2 tbsp brown sugar
  • 1 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • ½ tsp red pepper flakes
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 buns (optional)
  • 2 cup coleslaw (optional)

Steps

  1. Pat the pork shoulder dry and season generously with salt, garlic powder, and onion powder.
  2. Place the seasoned pork shoulder in a slow cooker.
  3. In a bowl, whisk together apple cider vinegar, water, brown sugar, ketchup, Worcestershire sauce, red pepper flakes, and black pepper to create the Carolina BBQ sauce.
  4. Pour the sauce over the pork shoulder in the slow cooker. Cook on low for 6-8 hours or until the pork is very tender and easily shreds.
  5. Carefully remove the pork from the slow cooker and shred it using two forks. Discard any excess fat.
  6. Return the shredded pork to the slow cooker and stir it into the sauce, ensuring it's well coated.
  7. Serve the Carolina-style BBQ pork warm on buns, optionally topped with coleslaw.
