Cheesy Beef and Shells

Ingredients

  • 1 lb ground beef
  • 8 oz medium shell pasta
  • 14½ oz diced tomatoes
  • 2 cup beef broth
  • 1 medium onion
  • 2 clove garlic
  • 1½ cup shredded cheddar cheese
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
  3. Add onion and garlic to the skillet and cook until softened, about 3-5 minutes. Stir in tomato paste, Italian seasoning, salt, and pepper, cooking for 1 minute more.
  4. Pour in diced tomatoes (undrained) and beef broth. Bring to a simmer.
  5. Add dry shell pasta to the skillet, stir well, and cover. Reduce heat to medium-low and cook for 10-12 minutes, or until pasta is tender, stirring occasionally to prevent sticking.
  6. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Serve hot, garnished with fresh parsley if desired.
