Cheesy Beef and Shells
A comforting one-pot meal featuring seasoned ground beef, tender pasta shells, and a rich, cheesy tomato sauce.
Ingredients
- 1 lb ground beef
- 8 oz medium shell pasta
- 14½ oz diced tomatoes
- 2 cup beef broth
- 1 medium onion
- 2 clove garlic
- 1½ cup shredded cheddar cheese
- 2 tbsp tomato paste
- 1 tbsp olive oil
- 1 tsp dried Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Dice the onion and mince the garlic.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
- Add onion and garlic to the skillet and cook until softened, about 3-5 minutes. Stir in tomato paste, Italian seasoning, salt, and pepper, cooking for 1 minute more.
- Pour in diced tomatoes (undrained) and beef broth. Bring to a simmer.
- Add dry shell pasta to the skillet, stir well, and cover. Reduce heat to medium-low and cook for 10-12 minutes, or until pasta is tender, stirring occasionally to prevent sticking.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Serve hot, garnished with fresh parsley if desired.
