Cheesy Ground Beef and Potato Casserole

Ingredients

  • 1 lb ground beef
  • 1½ lb potatoes, russet
  • 1 medium onion, yellow
  • 2 clove garlic
  • 2 cup cheddar cheese, shredded
  • ½ cup milk
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Preheat oven to 375°F (190°C). Peel and thinly slice potatoes. Dice the onion and mince the garlic.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  3. Add diced onion and minced garlic to the skillet with the beef; cook until the onion softens, about 5 minutes. Stir in flour, salt, pepper, and paprika, cooking for 1 minute.
  4. Gradually whisk in beef broth and milk, bringing the mixture to a simmer and cooking until slightly thickened, about 2-3 minutes. Remove from heat.
  5. Layer half of the sliced potatoes in the bottom of a 9x13 inch baking dish. Spread the beef mixture evenly over the potatoes.
  6. Top with the remaining sliced potatoes, overlapping slightly. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove foil, sprinkle with shredded cheddar cheese, and bake uncovered for another 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.
  8. Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.
