Cheesy Ground Beef and Potato Casserole

Ingredients
- 1 lb ground beef
- 1½ lb potatoes, russet
- 1 medium onion, yellow
- 2 clove garlic
- 2 cup cheddar cheese, shredded
- ½ cup milk
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp vegetable oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Preheat oven to 375°F (190°C). Peel and thinly slice potatoes. Dice the onion and mince the garlic.
- Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Add diced onion and minced garlic to the skillet with the beef; cook until the onion softens, about 5 minutes. Stir in flour, salt, pepper, and paprika, cooking for 1 minute.
- Gradually whisk in beef broth and milk, bringing the mixture to a simmer and cooking until slightly thickened, about 2-3 minutes. Remove from heat.
- Layer half of the sliced potatoes in the bottom of a 9x13 inch baking dish. Spread the beef mixture evenly over the potatoes.
- Top with the remaining sliced potatoes, overlapping slightly. Cover the baking dish with foil and bake for 30 minutes.
- Remove foil, sprinkle with shredded cheddar cheese, and bake uncovered for another 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.
- Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.
