Ingredients

  • 1½ lb boneless, skinless chicken breast
  • 1 cup pickle juice
  • 2 egg
  • ½ cup milk
  • 2 cup all-purpose flour
  • 4 tbsp powdered sugar
  • 2 tsp paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp celery salt
  • 2 tsp cayenne pepper (optional)
  • 4 cup vegetable oil
  • 4 sesame seed burger buns
  • ½ cup pickle slices (optional)
  • 1 tsp hot sauce (optional)

Steps

  1. Pound chicken breasts to about 1/2 inch thickness, then cut each into two even pieces.
  2. Marinate chicken in pickle juice (and hot sauce, if desired) for 30-60 minutes.
  3. In one bowl, whisk egg and milk. In another, combine flour, powdered sugar, paprika, salt, black pepper, garlic powder, celery salt, and cayenne pepper (if using).
  4. Dip each chicken piece into the egg mixture, then coat thoroughly in the flour mixture.
  5. Heat about 1/2 inch of oil in a large skillet to 345-350°F (175-177°C).
  6. Fry chicken cutlets for 2 minutes per side, or until golden brown and cooked through.
  7. Drain chicken on paper towels. Lightly toast the burger buns.
  8. Serve chicken on toasted buns with pickle slices.
