Chicken and Broccoli Bake

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 4 cup broccoli florets
  • 10½ oz cream of mushroom soup
  • ½ cup milk
  • 1 cup cheddar cheese, shredded
  • 2 tbsp butter
  • ½ cup breadcrumbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)

Steps

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Cut chicken breasts into 1-inch cubes. Steam or lightly blanch broccoli florets for 3-5 minutes until tender-crisp.
  3. In a large bowl, whisk together cream of mushroom soup, milk, salt, pepper, and garlic powder (if using). Stir in the cubed chicken and broccoli.
  4. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle shredded cheddar cheese over the top.
  5. In a small bowl, melt butter and toss with breadcrumbs until coated. Sprinkle the buttered breadcrumbs over the cheese layer.
  6. Bake for 25-30 minutes, or until chicken is cooked through and the topping is golden brown and bubbly. Let stand for a few minutes before serving.
