Chicken and Broccoli Bake
A comforting and easy-to-make casserole featuring tender chicken and fresh broccoli in a creamy sauce, topped with crunchy breadcrumbs.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 4 cup broccoli florets
- 10½ oz cream of mushroom soup
- ½ cup milk
- 1 cup cheddar cheese, shredded
- 2 tbsp butter
- ½ cup breadcrumbs
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder (optional)
Steps
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Cut chicken breasts into 1-inch cubes. Steam or lightly blanch broccoli florets for 3-5 minutes until tender-crisp.
- In a large bowl, whisk together cream of mushroom soup, milk, salt, pepper, and garlic powder (if using). Stir in the cubed chicken and broccoli.
- Pour the mixture into the prepared baking dish and spread evenly. Sprinkle shredded cheddar cheese over the top.
- In a small bowl, melt butter and toss with breadcrumbs until coated. Sprinkle the buttered breadcrumbs over the cheese layer.
- Bake for 25-30 minutes, or until chicken is cooked through and the topping is golden brown and bubbly. Let stand for a few minutes before serving.
