Chicken Divan
A classic comfort food, Chicken Divan features tender chicken and broccoli florets baked in a creamy, cheesy sauce, often topped with crunchy breadcrumbs.
Ingredients
- 1½ lb chicken breasts
- 16 oz broccoli florets
- 10½ oz cream of chicken soup
- ½ cup mayonnaise
- ¼ cup milk
- 1 tbsp lemon juice
- ½ tsp curry powder
- 1 cup cheddar cheese, shredded
- ¼ cup Parmesan cheese, grated (optional)
- ½ cup breadcrumbs (optional)
- 2 tbsp butter, melted (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 375°F (190°C). Cook chicken breasts until done, then shred or cut into bite-sized pieces. Steam or blanch broccoli florets until tender-crisp.
- In a large bowl, whisk together cream of chicken soup, mayonnaise, milk, lemon juice, curry powder, salt, and pepper until smooth.
- Stir the cooked chicken and broccoli into the soup mixture, ensuring everything is well coated.
- Transfer the mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese evenly over the top.
- If using, combine breadcrumbs with melted butter and sprinkle over the cheese. Optionally, sprinkle with grated Parmesan cheese.
- Bake for 25-30 minutes, or until bubbly and the cheese is melted and lightly golden.
