Ingredients

  • 1½ lb chicken breasts
  • 16 oz broccoli florets
  • 10½ oz cream of chicken soup
  • ½ cup mayonnaise
  • ¼ cup milk
  • 1 tbsp lemon juice
  • ½ tsp curry powder
  • 1 cup cheddar cheese, shredded
  • ¼ cup Parmesan cheese, grated (optional)
  • ½ cup breadcrumbs (optional)
  • 2 tbsp butter, melted (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 375°F (190°C). Cook chicken breasts until done, then shred or cut into bite-sized pieces. Steam or blanch broccoli florets until tender-crisp.
  2. In a large bowl, whisk together cream of chicken soup, mayonnaise, milk, lemon juice, curry powder, salt, and pepper until smooth.
  3. Stir the cooked chicken and broccoli into the soup mixture, ensuring everything is well coated.
  4. Transfer the mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese evenly over the top.
  5. If using, combine breadcrumbs with melted butter and sprinkle over the cheese. Optionally, sprinkle with grated Parmesan cheese.
  6. Bake for 25-30 minutes, or until bubbly and the cheese is melted and lightly golden.
