Chicken Gyros
Enjoy the classic flavors of Greece with tender marinated chicken, fresh vegetables, and creamy tzatziki sauce all wrapped in a warm pita.
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ cup plain Greek yogurt
- 1 cucumber
- 1 lemon
- 3 clove garlic
- 2 tbsp fresh dill
- 3 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
- 4 pita bread
- ½ red onion (optional)
- 2 tomato (optional)
- 2 cup lettuce (optional)
Steps
- Pat chicken thighs dry and slice into thin strips. In a bowl, combine 1 tbsp olive oil, 1 minced garlic clove, oregano, paprika, salt, and pepper. Add chicken and toss to coat. Marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
- While chicken marinates, prepare the tzatziki: Grate the cucumber and squeeze out excess water. In a small bowl, combine Greek yogurt, grated cucumber, 2 minced garlic cloves, fresh dill, 1 tbsp lemon juice, and a pinch of salt and pepper. Mix well and refrigerate.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add marinated chicken in a single layer and cook for 5-7 minutes, flipping occasionally, until browned and cooked through.
- Warm pita bread according to package instructions. Slice red onion, tomatoes, and shred lettuce if using.
- Assemble gyros: Spread a generous amount of tzatziki on each warm pita. Fill with cooked chicken, sliced red onion, tomato, and lettuce.
- Fold or roll the pita to secure the fillings and serve immediately.
