Chicken Gyros

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ cup plain Greek yogurt
  • 1 cucumber
  • 1 lemon
  • 3 clove garlic
  • 2 tbsp fresh dill
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ¾ tsp salt
  • ½ tsp black pepper
  • 4 pita bread
  • ½ red onion (optional)
  • 2 tomato (optional)
  • 2 cup lettuce (optional)

Steps

  1. Pat chicken thighs dry and slice into thin strips. In a bowl, combine 1 tbsp olive oil, 1 minced garlic clove, oregano, paprika, salt, and pepper. Add chicken and toss to coat. Marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
  2. While chicken marinates, prepare the tzatziki: Grate the cucumber and squeeze out excess water. In a small bowl, combine Greek yogurt, grated cucumber, 2 minced garlic cloves, fresh dill, 1 tbsp lemon juice, and a pinch of salt and pepper. Mix well and refrigerate.
  3. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add marinated chicken in a single layer and cook for 5-7 minutes, flipping occasionally, until browned and cooked through.
  4. Warm pita bread according to package instructions. Slice red onion, tomatoes, and shred lettuce if using.
  5. Assemble gyros: Spread a generous amount of tzatziki on each warm pita. Fill with cooked chicken, sliced red onion, tomato, and lettuce.
  6. Fold or roll the pita to secure the fillings and serve immediately.
