Lamb and Lemon Souvlaki
Tender pieces of marinated lamb, infused with lemon, garlic, and dill, grilled to perfection and served in warm pita bread.
Ingredients
- 2 clove garlic
- 2 tsp sea salt
- 4 tbs olive oil
- 1 lemon
- 1 tbs dill
- 1½ lb lamb leg
- 4 pita bread
Steps
- Pound garlic with sea salt to form a paste, then whisk with olive oil, lemon zest and juice, and dill.
- Cut lamb into 1-inch cubes, add to the marinade, and mix well. Marinate for at least 2 hours or overnight in the fridge.
- If using bamboo skewers, soak them in water for 30 minutes. Thread the marinated lamb onto skewers.
- Preheat a grill, griddle pan, or barbecue to high heat.
- Cook skewers for 2-3 minutes per side, basting with any remaining marinade, until lamb is cooked through.
- Briefly heat pita bread on the grill or stovetop.
- Serve the lamb souvlaki in warm pita bread.
