Chicken Souvlaki

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 1 lemon
  • 4 tbsp olive oil
  • 4 clove garlic
  • 2 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 wooden skewers
  • 4 pita bread
  • ¾ cup tzatziki sauce (optional)
  • ½ red onion (optional)
  • 1 cup cherry tomatoes (optional)
  • ½ cucumber (optional)

Steps

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Cut chicken thighs into 1-inch cubes. In a bowl, combine chicken with the juice of one lemon, olive oil, minced garlic, oregano, salt, and pepper. Mix well and marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
  3. Preheat your grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
  4. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and nicely charred.
  5. Warm the pita bread on the grill for 30 seconds per side, or until soft and slightly toasted.
  6. Serve the grilled chicken souvlaki immediately with warm pita bread, a generous dollop of tzatziki, and optional fresh toppings like sliced red onion, cherry tomatoes, and cucumber.
