Chickpea Salad Sandwiches

Ingredients

  • 30 oz canned chickpeas
  • 2 celery stalks
  • ¼ red onion
  • ½ cup vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 slices sandwich bread
  • 4 lettuce leaves (optional)
  • 1 tomato (optional)

Steps

  1. Drain and rinse the canned chickpeas thoroughly. Place them in a medium bowl and mash with a fork or potato masher until mostly broken down but still with some texture.
  2. Finely dice the celery and red onion. Add them to the bowl with the mashed chickpeas.
  3. Stir in the vegan mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. If using, add the fresh dill.
  4. Mix everything until well combined. Taste and adjust seasonings as needed.
  5. Assemble the sandwiches: spread the chickpea salad generously onto four slices of bread. Top with lettuce and tomato slices if desired, then cover with the remaining bread slices.
