Chilean Sea Bass with Lemon Butter Sauce

Ingredients

  • 1½ lb Chilean Sea Bass fillets
  • ½ cup unsalted butter
  • 2 lemon
  • 2 clove garlic
  • ¼ cup fresh parsley (optional)
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup white wine (optional)

Steps

  1. Pat the Chilean sea bass fillets dry with paper towels and season generously with salt and pepper.
  2. Melt 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the fish fillets skin-side down (if applicable) for 4-5 minutes until golden and crispy. Flip and cook for another 3-4 minutes, or until cooked through and flaky. Remove fish from skillet and set aside.
  3. Reduce heat to medium. Add butter to the same skillet and melt. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in white wine (if using) and lemon juice. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
  5. Stir in chopped fresh parsley. Taste and adjust seasoning as needed.
  6. Spoon the lemon butter sauce generously over the cooked Chilean sea bass fillets and serve immediately.
