Ingredients

  • 1 lb ground beef
  • 1 onion
  • 2 clove garlic
  • 14½ oz canned diced tomatoes
  • 15 oz canned kidney beans
  • 8 oz tomato sauce
  • 2 cup beef broth
  • 1½ cup macaroni pasta
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup cheddar cheese (optional)

Steps

  1. Brown ground beef in a large skillet over medium-high heat, breaking it apart. Drain any excess fat.
  2. Add chopped onion and minced garlic to the skillet and cook until softened, about 3-5 minutes.
  3. Stir in diced tomatoes, kidney beans, tomato sauce, beef broth, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer.
  4. Add macaroni pasta to the skillet, stir well, and cover. Reduce heat to medium-low and cook for 15-20 minutes, or until pasta is tender, stirring occasionally to prevent sticking.
  5. If desired, stir in shredded cheddar cheese until melted and creamy.
  6. Serve hot, garnished with extra cheese if desired.
