Cincinnati Chili 3-Way
A unique regional chili served over spaghetti and topped with cheese, offering a blend of savory and subtle sweet spices.
Ingredients
- 1½ lb ground beef
- 1 medium yellow onion
- 3 clove garlic
- 2 cup beef broth
- 6 oz tomato paste
- 2 tbsp chili powder
- 1 tbsp unsweetened cocoa powder
- ½ tsp cinnamon
- ¼ tsp allspice
- ¼ tsp cloves
- 1 tsp cumin
- ½ tsp dried oregano
- ¼ tsp cayenne pepper (optional)
- 1 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 8 oz spaghetti
- 2 cup shredded cheddar cheese
Steps
- Brown the ground beef in a large pot over medium-high heat, breaking it up as it cooks. Drain off any excess fat.
- Add chopped onion and minced garlic to the pot with the beef. Cook until softened, about 5-7 minutes.
- Stir in tomato paste, chili powder, cocoa powder, cinnamon, allspice, cloves, cumin, oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute until fragrant.
- Pour in beef broth, apple cider vinegar, and Worcestershire sauce. Bring to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or up to 2 hours, stirring occasionally.
- While the chili simmers, cook the spaghetti according to package directions until al dente. Drain well.
- To serve 3-Way, place a portion of cooked spaghetti on a plate, ladle chili over the spaghetti, and top generously with shredded cheddar cheese.
