Classic Beef Chili
A hearty and flavorful bowl of classic beef chili, perfect for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 medium yellow onion
- 3 garlic cloves
- 1 medium bell pepper
- 28 oz canned diced tomatoes
- 15 oz canned kidney beans
- 15 oz canned pinto beans
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- ½ cup shredded cheddar cheese (optional)
- ¼ cup sour cream (optional)
- ¼ cup fresh cilantro (optional)
Steps
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion, minced garlic, and diced bell pepper to the pot. Cook until vegetables are softened, about 5-7 minutes.
- Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant.
- Pour in diced tomatoes (undrained), rinsed and drained kidney beans, rinsed and drained pinto beans, and beef broth. Bring to a simmer.
- Reduce heat to low, cover, and let the chili simmer for at least 30 minutes, or up to 1 hour, stirring occasionally, to allow flavors to meld.
- Taste and adjust seasonings as needed. Serve hot, garnished with shredded cheddar cheese, sour cream, and fresh cilantro, if desired.
