Classic Grilled Cheese & Tomato Soup

A comforting duo of creamy tomato soup paired with a perfectly golden, cheesy grilled sandwich.

Ingredients

  • 28 oz canned diced tomatoes
  • 4 cup vegetable broth
  • ½ onion
  • 2 clove garlic
  • ½ cup heavy cream
  • 2 tbsp butter
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 slice sandwich bread
  • 8 oz cheddar cheese
  • 2 tbsp butter

Steps

  1. Melt 1 tbsp butter and 1 tbsp olive oil in a pot. Sauté chopped onion until soft, then add minced garlic and cook for 1 minute.
  2. Add diced tomatoes, vegetable broth, salt, and pepper to the pot. Bring to a simmer and cook for 15 minutes.
  3. Carefully blend the soup until smooth using an immersion blender or by transferring to a regular blender. Return to the pot.
  4. Stir in the heavy cream and heat through gently; do not boil.
  5. Butter one side of each slice of bread. Place cheese between the unbuttered sides of two slices of bread to form sandwiches.
  6. Heat a skillet over medium heat. Place sandwiches butter-side down and cook for 3-4 minutes per side, until golden brown and cheese is melted.
  7. Slice grilled cheese sandwiches in half and serve immediately with the hot tomato soup.
