Classic Grilled Cheese & Tomato Soup
A comforting duo of creamy tomato soup paired with a perfectly golden, cheesy grilled sandwich.
Ingredients
- 28 oz canned diced tomatoes
- 4 cup vegetable broth
- ½ onion
- 2 clove garlic
- ½ cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 8 slice sandwich bread
- 8 oz cheddar cheese
- 2 tbsp butter
Steps
- Melt 1 tbsp butter and 1 tbsp olive oil in a pot. Sauté chopped onion until soft, then add minced garlic and cook for 1 minute.
- Add diced tomatoes, vegetable broth, salt, and pepper to the pot. Bring to a simmer and cook for 15 minutes.
- Carefully blend the soup until smooth using an immersion blender or by transferring to a regular blender. Return to the pot.
- Stir in the heavy cream and heat through gently; do not boil.
- Butter one side of each slice of bread. Place cheese between the unbuttered sides of two slices of bread to form sandwiches.
- Heat a skillet over medium heat. Place sandwiches butter-side down and cook for 3-4 minutes per side, until golden brown and cheese is melted.
- Slice grilled cheese sandwiches in half and serve immediately with the hot tomato soup.
