Ingredients
- 1½ cup all-purpose flour
- 2 tbsp granulated sugar
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1¼ cup milk

- 2 tbsp vegetable oil
- 12 slice bacon
- 2 tbsp butter (optional)

Steps
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together milk, egg, and vegetable oil.
- Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.
- Cook bacon in a large skillet over medium heat until crispy; remove bacon and drain excess fat, reserving a little if desired for cooking pancakes.
- Heat a lightly oiled griddle or large skillet over medium heat. Pour about 1/4 cup of batter per pancake.
- Cook pancakes for 2-3 minutes per side, or until golden brown and cooked through.
- Serve pancakes immediately with crispy bacon, butter, and maple syrup if desired.
