  • 1½ cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1¼ cup milk
  • 1 large egg
  • 2 tbsp vegetable oil
  • 12 slice bacon
  • 2 tbsp butter (optional)
  • ½ cup maple syrup (optional)

Steps

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together milk, egg, and vegetable oil.
  3. Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.
  4. Cook bacon in a large skillet over medium heat until crispy; remove bacon and drain excess fat, reserving a little if desired for cooking pancakes.
  5. Heat a lightly oiled griddle or large skillet over medium heat. Pour about 1/4 cup of batter per pancake.
  6. Cook pancakes for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve pancakes immediately with crispy bacon, butter, and maple syrup if desired.
