Classic Salmon Patties

Ingredients

  • 14¾ oz canned salmon
  • 1 large egg
  • ½ cup Panko breadcrumbs
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 2 tbsp fresh parsley (optional)
  • 1 tbsp lemon juice
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp vegetable oil

Steps

  1. Drain the canned salmon well, remove any large bones or skin if desired, then flake it into a medium bowl.
  2. Add the egg, Panko breadcrumbs, mayonnaise, Dijon mustard, lemon juice, onion powder, garlic powder, salt, pepper, and optional parsley to the salmon. Mix gently until just combined.
  3. Form the mixture into 4 equal patties, about 1-inch thick.
  4. Heat vegetable oil in a large non-stick skillet over medium heat.
  5. Carefully place the salmon patties in the hot skillet. Cook for 4-5 minutes per side, or until golden brown and heated through.
  6. Remove patties from skillet and serve immediately, perhaps with a squeeze of fresh lemon or a side of tartar sauce.
