Corned Beef Hash

Ingredients

  • 3 tbsp unsalted butter
  • 1 medium onion
  • 3 cup corned beef
  • 3 cup potatoes
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Melt butter in a large skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Stir in the chopped corned beef and potatoes, spreading the mixture evenly across the pan.
  3. Increase heat to medium-high. Press down on the hash with a spatula and cook without stirring until a browned crust forms on the bottom, about 8-10 minutes.
  4. Use a metal spatula to flip sections of the hash, then press down again to encourage browning on the other side. Cook for another 8-10 minutes.
  5. Continue cooking and flipping until the potatoes and corned beef are nicely browned and crispy.
  6. Remove from heat, stir in chopped parsley, and season generously with salt and black pepper to taste.
