Cornflake Crusted Chicken
Crispy, crunchy chicken coated in cornflakes and baked to golden perfection, a kid-friendly favorite.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 3 cup cornflakes
- ½ cup all-purpose flour
- 2 large eggs
- 2 tbsp milk
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ¾ tsp salt
- ¼ tsp black pepper
- 1 cooking spray
Steps
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spray lightly with cooking spray.
- Crush cornflakes into fine crumbs. In a shallow dish, combine cornflake crumbs, paprika, garlic powder, onion powder, salt, and pepper.
- In a second shallow dish, whisk eggs and milk. In a third shallow dish, place the flour.
- Cut chicken breasts into 1-inch thick strips or bite-sized pieces. Dredge each piece of chicken first in flour, shaking off excess, then dip in egg mixture, and finally press into cornflake mixture to coat thoroughly.
- Arrange coated chicken on the prepared baking sheet in a single layer. Spray the tops of the chicken lightly with cooking spray for extra crispiness.
- Bake for 20-25 minutes, or until chicken is cooked through and golden brown, flipping halfway if desired.
