Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 cup cornflakes
  • ½ cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 cooking spray

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spray lightly with cooking spray.
  2. Crush cornflakes into fine crumbs. In a shallow dish, combine cornflake crumbs, paprika, garlic powder, onion powder, salt, and pepper.
  3. In a second shallow dish, whisk eggs and milk. In a third shallow dish, place the flour.
  4. Cut chicken breasts into 1-inch thick strips or bite-sized pieces. Dredge each piece of chicken first in flour, shaking off excess, then dip in egg mixture, and finally press into cornflake mixture to coat thoroughly.
  5. Arrange coated chicken on the prepared baking sheet in a single layer. Spray the tops of the chicken lightly with cooking spray for extra crispiness.
  6. Bake for 20-25 minutes, or until chicken is cooked through and golden brown, flipping halfway if desired.
