Country Fried Steak with Gravy and Green Beans

Ingredients

  • 1½ lb cube steak
  • 1½ cup all-purpose flour
  • 2 egg
  • ¼ cup milk
  • 1½ tsp salt
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • ½ cup vegetable oil
  • 2 tbsp butter
  • 2 cup beef broth
  • 1 lb fresh green beans
  • ½ tsp onion powder
  • 4 servings mashed potatoes (optional)

Steps

  1. Pat cube steaks dry. In a shallow dish, whisk together 1 cup flour, 1 tsp salt, 0.5 tsp black pepper, and garlic powder. In another shallow dish, whisk eggs and milk.
  2. Dip each steak into the egg mixture, then dredge thoroughly in the flour mixture, pressing to coat well. Repeat for a double coating if desired.
  3. Heat vegetable oil in a large skillet over medium-high heat until shimmering. Carefully place steaks in the hot oil without overcrowding, and fry for 3-5 minutes per side, or until golden brown and cooked through. Remove steaks and place on a wire rack to drain, keeping warm.
  4. Drain all but 2 tablespoons of oil from the skillet. Add butter and melt. Whisk in 0.5 cup flour, 0.5 tsp salt, 0.5 tsp black pepper, and onion powder, cooking for 2 minutes until a light roux forms.
  5. Gradually whisk in beef broth, stirring constantly to prevent lumps. Bring to a simmer and cook for 5-7 minutes, or until the gravy thickens to your desired consistency. Season with additional salt and pepper to taste.
  6. While gravy cooks, steam or boil green beans until tender-crisp, about 5-7 minutes. Season with salt and pepper.
  7. Serve country fried steaks hot, smothered with gravy, alongside the green beans and optional mashed potatoes.
