Ingredients

  • ½ lb all-purpose flour
  • 4½ oz unsalted butter
  • 1 egg
  • ¼ tsp salt
  • ⅔ lb cream cheese
  • 0.4 cup milk
  • 3 eggs
  • 3½ oz Parmesan cheese
  • ¼ tsp black pepper
  • ⅛ tsp nutmeg
  • ¾ lb plum tomatoes
  • 3 tbsp olive oil
  • 3 tbsp white vinegar
  • 1 tbsp honey
  • ¼ cup fresh basil leaves (optional)

Steps

  1. Prepare the crust: combine flour, softened butter, 1 egg, and a pinch of salt to form a dough. Press into a 9-inch tart pan and chill in the refrigerator for 30 minutes.
  2. Preheat oven to 350°F (175°C). Prick the bottom of the chilled tart crust with a fork.
  3. Make the filling: whisk cream cheese and milk until smooth. Beat in 3 eggs, grated Parmesan cheese, salt, pepper, and nutmeg.
  4. Pour the filling into the tart crust. Bake for 25 minutes, covering with foil after 12-13 minutes to prevent over-browning.
  5. While the tart bakes, prepare the tomatoes: slice plum tomatoes. In a small pan, heat olive oil, white vinegar, honey, salt, and pepper. Pour over sliced tomatoes and mix.
  6. Once the tart is baked, let it cool slightly. Arrange the marinated tomato slices on top of the tart, avoiding excess liquid.
  7. Garnish with fresh basil leaves before serving.
