Cream Cheese Tart with Marinated Tomatoes

Ingredients
- ½ lb all-purpose flour
- 4½ oz unsalted butter
- 1 egg
- ¼ tsp salt
- ⅔ lb cream cheese
- 0.4 cup milk
- 3 eggs
- 3½ oz Parmesan cheese
- ¼ tsp black pepper
- ⅛ tsp nutmeg
- ¾ lb plum tomatoes
- 3 tbsp olive oil
- 3 tbsp white vinegar
- 1 tbsp honey
- ¼ cup fresh basil leaves (optional)
Steps
- Prepare the crust: combine flour, softened butter, 1 egg, and a pinch of salt to form a dough. Press into a 9-inch tart pan and chill in the refrigerator for 30 minutes.
- Preheat oven to 350°F (175°C). Prick the bottom of the chilled tart crust with a fork.
- Make the filling: whisk cream cheese and milk until smooth. Beat in 3 eggs, grated Parmesan cheese, salt, pepper, and nutmeg.
- Pour the filling into the tart crust. Bake for 25 minutes, covering with foil after 12-13 minutes to prevent over-browning.
- While the tart bakes, prepare the tomatoes: slice plum tomatoes. In a small pan, heat olive oil, white vinegar, honey, salt, and pepper. Pour over sliced tomatoes and mix.
- Once the tart is baked, let it cool slightly. Arrange the marinated tomato slices on top of the tart, avoiding excess liquid.
- Garnish with fresh basil leaves before serving.
