Creamy Mushroom Chicken
Tender chicken breasts smothered in a rich and savory cream sauce with earthy mushrooms, perfect for a comforting weeknight meal.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 8 oz cremini mushrooms
- ½ yellow onion
- 3 clove garlic
- 1 cup heavy cream
- ¾ cup chicken broth
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 tbsp butter
- 2 tbsp fresh parsley (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- Pat chicken breasts dry and season with salt and pepper. Slice mushrooms and finely chop onion and garlic.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add butter to the skillet. Sauté mushrooms and onion for 5-7 minutes until softened. Add garlic and cook for 1 minute more until fragrant.
- Sprinkle flour over the vegetables and stir for 1 minute. Gradually whisk in chicken broth and heavy cream, stirring constantly to prevent lumps.
- Bring the sauce to a simmer, then reduce heat to low and cook for 5-7 minutes, or until thickened to your desired consistency. Season with additional salt and pepper to taste.
- Return cooked chicken to the skillet, coating it in the creamy mushroom sauce. Heat through for 1-2 minutes.
- Garnish with fresh parsley, if using, and serve immediately.
