Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 8 oz cremini mushrooms
  • ½ yellow onion
  • 3 clove garlic
  • 1 cup heavy cream
  • ¾ cup chicken broth
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp fresh parsley (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Pat chicken breasts dry and season with salt and pepper. Slice mushrooms and finely chop onion and garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add butter to the skillet. Sauté mushrooms and onion for 5-7 minutes until softened. Add garlic and cook for 1 minute more until fragrant.
  4. Sprinkle flour over the vegetables and stir for 1 minute. Gradually whisk in chicken broth and heavy cream, stirring constantly to prevent lumps.
  5. Bring the sauce to a simmer, then reduce heat to low and cook for 5-7 minutes, or until thickened to your desired consistency. Season with additional salt and pepper to taste.
  6. Return cooked chicken to the skillet, coating it in the creamy mushroom sauce. Heat through for 1-2 minutes.
  7. Garnish with fresh parsley, if using, and serve immediately.
