Ingredients

  • 8 falafel
  • 0.17 cup tahini
  • 0.17 cup water
  • 1⅓ tbsp lemon juice
  • 1⅓ clove garlic
  • 0.17 tsp paprika
  • 4 pita bread
  • ⅔ head lettuce
  • ⅔ tomato
  • ⅓ cucumber
  • ⅔ dill pickles
  • 0.17 red onion
  • 2 tsp harissa spice (optional)

Steps

  1. Preheat the oven to 450°F (230°C). Place falafel on a baking sheet and bake for 8-10 minutes until heated through.
  2. While falafel bake, whisk together tahini, water, lemon juice, minced garlic, and paprika in a small bowl to create the tahini sauce.
  3. Prepare your vegetables by slicing lettuce, tomato, cucumber, pickles, and red onion.
  4. Cut about 1 inch from the top of each pita bread to form a pocket.
  5. Fill each pita with 2 falafel, then add equal amounts of lettuce, tomato, cucumber, pickle, and red onion.
  6. Drizzle each sandwich generously with tahini sauce and sprinkle with harissa spice, if desired.
