Falafel Pita Sandwich with Tahini Sauce

Ingredients
- 8 falafel
- 0.17 cup tahini
- 0.17 cup water
- 1⅓ tbsp lemon juice
- 1⅓ clove garlic
- 0.17 tsp paprika
- 4 pita bread
- ⅔ head lettuce
- ⅔ tomato
- ⅓ cucumber
- ⅔ dill pickles
- 0.17 red onion
- 2 tsp harissa spice (optional)
Steps
- Preheat the oven to 450°F (230°C). Place falafel on a baking sheet and bake for 8-10 minutes until heated through.
- While falafel bake, whisk together tahini, water, lemon juice, minced garlic, and paprika in a small bowl to create the tahini sauce.
- Prepare your vegetables by slicing lettuce, tomato, cucumber, pickles, and red onion.
- Cut about 1 inch from the top of each pita bread to form a pocket.
- Fill each pita with 2 falafel, then add equal amounts of lettuce, tomato, cucumber, pickle, and red onion.
- Drizzle each sandwich generously with tahini sauce and sprinkle with harissa spice, if desired.
