Tofu, Greens & Cashew Stir-Fry

Ingredients

  • 1 tbsp vegetable oil
  • 1 head broccoli
  • 4 clove garlic
  • 1 red chili
  • 1 bunch green onions
  • 0.3 lb soya beans
  • 2 head bok choy
  • ⅔ lb marinated tofu
  • 1½ tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 0.05 lb cashew nuts

Steps

  1. Heat vegetable oil in a non-stick wok over high heat.
  2. Add broccoli and stir-fry for 5 minutes until tender-crisp, adding a splash of water if needed to prevent sticking.
  3. Stir in garlic and red chili; cook for 1 minute until fragrant.
  4. Add green onions, soya beans, bok choy, and marinated tofu to the wok. Stir-fry for 2-3 minutes.
  5. Pour in hoisin sauce and soy sauce, then add cashew nuts. Toss everything together to warm through and coat evenly.
  6. Serve immediately.
