Tofu, Greens & Cashew Stir-Fry
A vibrant Vietnamese-inspired stir-fry featuring marinated tofu, crisp greens, and crunchy cashews, all coated in a savory hoisin-soy sauce.
Ingredients
- 1 tbsp vegetable oil
- 1 head broccoli
- 4 clove garlic
- 1 red chili
- 1 bunch green onions
- 0.3 lb soya beans
- 2 head bok choy
- ⅔ lb marinated tofu
- 1½ tbsp hoisin sauce
- 1 tbsp soy sauce
- 0.05 lb cashew nuts
Steps
- Heat vegetable oil in a non-stick wok over high heat.
- Add broccoli and stir-fry for 5 minutes until tender-crisp, adding a splash of water if needed to prevent sticking.
- Stir in garlic and red chili; cook for 1 minute until fragrant.
- Add green onions, soya beans, bok choy, and marinated tofu to the wok. Stir-fry for 2-3 minutes.
- Pour in hoisin sauce and soy sauce, then add cashew nuts. Toss everything together to warm through and coat evenly.
- Serve immediately.
