French Dip Sandwiches

Ingredients

  • 1½ lb roast beef
  • 4 cup beef broth
  • 1 onion
  • 2 clove garlic
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme
  • 1 bay leaf
  • 2 baguettes
  • 2 tbsp unsalted butter
  • 4 slice provolone cheese (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 350°F (175°C). Slice the onion thinly and mince the garlic.
  2. In a large pot or Dutch oven, melt butter over medium heat. Add onions and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Pour in beef broth, Worcestershire sauce, thyme, bay leaf, salt, and pepper. Bring to a simmer, then reduce heat and let it gently simmer for 20-30 minutes to develop flavor.
  4. Slice baguettes lengthwise and lightly toast them in the oven for 5 minutes.
  5. Thinly slice the roast beef. Add the sliced beef to the simmering au jus for 1-2 minutes to warm through.
  6. Remove bay leaf from the au jus. Arrange the warmed beef onto the toasted baguette halves. If desired, top with provolone cheese and return to the oven for 2-3 minutes until cheese is melted.
  7. Serve sandwiches immediately with small bowls of the hot au jus for dipping.
