Ingredients

  • 1½ lb catfish fillets
  • 1½ cup cornmeal
  • ½ cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional)
  • 1½ tsp salt
  • ¾ tsp black pepper
  • 1 cup buttermilk
  • 3 cup vegetable oil
  • 2 lemon wedges (optional)
  • ½ cup tartar sauce (optional)

Steps

  1. Pat catfish fillets dry with paper towels. In a shallow dish, combine cornmeal, flour, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Mix well.
  2. Pour buttermilk into another shallow dish. Dip each catfish fillet into the buttermilk, ensuring it's fully coated, then dredge thoroughly in the cornmeal mixture, pressing to adhere.
  3. Heat vegetable oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C).
  4. Carefully place 2-3 fillets into the hot oil, ensuring not to overcrowd the pan. Fry for 4-6 minutes per side, or until golden brown and cooked through.
  5. Remove fried catfish with tongs and place on a wire rack set over paper towels to drain excess oil.
  6. Repeat with remaining fillets. Serve immediately with lemon wedges and tartar sauce, if desired.
