Frito Pie

Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 14½ oz canned diced tomatoes
  • 15 oz canned kidney beans
  • ½ cup beef broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • 9 oz Fritos corn chips
  • 1½ cup shredded cheddar cheese
  • 2 green onions (optional)
  • ½ cup sour cream (optional)

Steps

  1. Preheat oven to 375°F (190°C). Drain and rinse kidney beans.
  2. Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
  3. Add chopped yellow onion and minced garlic to the skillet with the beef. Cook until onion is softened, about 5 minutes.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in diced tomatoes (undrained), kidney beans, and beef broth. Bring to a simmer, then reduce heat and cook for 10-15 minutes, allowing chili to thicken.
  6. Spread Fritos corn chips evenly in a 9x13 inch baking dish. Pour the chili mixture over the chips.
  7. Sprinkle shredded cheddar cheese over the chili. Bake for 10-15 minutes, or until cheese is melted and bubbly.
  8. Garnish with chopped green onions and a dollop of sour cream, if desired, before serving.
