Frito Pie
A classic comfort food, Frito Pie features a hearty chili base layered over crunchy Fritos corn chips, often topped with cheese and onions.
Ingredients
- 1 lb ground beef
- 1 medium yellow onion
- 2 cloves garlic
- 2 tbsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- 14½ oz canned diced tomatoes
- 15 oz canned kidney beans
- ½ cup beef broth
- ½ tsp salt
- ¼ tsp black pepper
- 9 oz Fritos corn chips
- 1½ cup shredded cheddar cheese
- 2 green onions (optional)
- ½ cup sour cream (optional)
Steps
- Preheat oven to 375°F (190°C). Drain and rinse kidney beans.
- Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
- Add chopped yellow onion and minced garlic to the skillet with the beef. Cook until onion is softened, about 5 minutes.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in diced tomatoes (undrained), kidney beans, and beef broth. Bring to a simmer, then reduce heat and cook for 10-15 minutes, allowing chili to thicken.
- Spread Fritos corn chips evenly in a 9x13 inch baking dish. Pour the chili mixture over the chips.
- Sprinkle shredded cheddar cheese over the chili. Bake for 10-15 minutes, or until cheese is melted and bubbly.
- Garnish with chopped green onions and a dollop of sour cream, if desired, before serving.
