Garides Saganaki
A classic Greek dish featuring succulent shrimp simmered in a rich tomato and white wine sauce, finished with tangy feta cheese.
Ingredients
- 1⅛ lb large shrimp
- 3 tbsp olive oil
- 1 onion
- ¼ cup fresh parsley
- 1 cup dry white wine
- 14½ oz canned chopped tomatoes
- ½ tsp garlic
- 7 oz feta cheese
- 4 slices crusty bread (optional)
Steps
- Boil shrimp in water for 5 minutes, then drain and set aside to cool. Reserve the cooking liquid.
- Heat 2 tablespoons of olive oil in a saucepan. Add the chopped onion and cook until soft.
- Stir in parsley, white wine, chopped tomatoes, garlic, and the remaining 1 tablespoon of olive oil. Simmer for 30 minutes, stirring occasionally, until the sauce thickens.
- Once cool enough, peel the shrimp, leaving heads and tails on.
- Add the peeled shrimp to the thickened sauce and simmer for 5 minutes.
- Stir in the cubed feta cheese and remove from heat. Let stand until the cheese begins to melt.
- Serve warm, optionally with crusty bread.
