Ingredients

  • 1½ lb cod fillets
  • ½ cup unsalted butter
  • 4 clove garlic
  • ¼ cup fresh parsley (optional)
  • 1 lemon
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 400°F (200°C). Pat cod fillets dry with paper towels.
  2. Melt butter in a small saucepan over medium-low heat. Add minced garlic and cook for 1 minute until fragrant. Remove from heat.
  3. Place cod fillets in a single layer on a baking sheet. Season with salt and pepper.
  4. Pour the garlic butter evenly over the cod fillets.
  5. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Squeeze fresh lemon juice over the cooked cod and garnish with chopped fresh parsley, if desired.
