Gigantes Plaki
A classic Greek baked giant bean dish, slow-cooked in a rich tomato sauce with aromatic herbs until tender and flavorful.
Ingredients
- 14⅛ oz large white beans (butter beans or cannellini)
- 3 tbsp olive oil
- 1 onion
- 2 clove garlic
- 2 tbsp tomato paste
- 28 oz canned crushed tomatoes
- 1 tbsp sugar
- 1 tbsp dried oregano
- ¼ tsp cinnamon
- 2 tbsp fresh parsley (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- Soak beans overnight, then drain, rinse, and simmer in fresh water for 50 minutes until slightly tender. Drain and set aside.
- Preheat oven to 350°F (180°C).
- Heat olive oil in a large oven-safe frying pan over medium heat. Sauté onion and garlic for 10 minutes until softened.
- Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, sugar, oregano, cinnamon, salt, and pepper. Simmer for 2-3 minutes.
- Stir the pre-cooked beans into the sauce. Transfer to a large ovenproof dish if not using an oven-safe pan.
- Bake uncovered for approximately 1 hour, or until beans are tender and the sauce has thickened.
- Let cool slightly. Garnish with fresh parsley and a drizzle of olive oil before serving.
