Gigantes Plaki

A classic Greek baked giant bean dish, slow-cooked in a rich tomato sauce with aromatic herbs until tender and flavorful.

Ingredients

  • 14⅛ oz large white beans (butter beans or cannellini)
  • 3 tbsp olive oil
  • 1 onion
  • 2 clove garlic
  • 2 tbsp tomato paste
  • 28 oz canned crushed tomatoes
  • 1 tbsp sugar
  • 1 tbsp dried oregano
  • ¼ tsp cinnamon
  • 2 tbsp fresh parsley (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Soak beans overnight, then drain, rinse, and simmer in fresh water for 50 minutes until slightly tender. Drain and set aside.
  2. Preheat oven to 350°F (180°C).
  3. Heat olive oil in a large oven-safe frying pan over medium heat. Sauté onion and garlic for 10 minutes until softened.
  4. Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, sugar, oregano, cinnamon, salt, and pepper. Simmer for 2-3 minutes.
  5. Stir the pre-cooked beans into the sauce. Transfer to a large ovenproof dish if not using an oven-safe pan.
  6. Bake uncovered for approximately 1 hour, or until beans are tender and the sauce has thickened.
  7. Let cool slightly. Garnish with fresh parsley and a drizzle of olive oil before serving.
