Gourmet Grilled Cheese with Bacon and Tomato

Ingredients
- 8 slice Sourdough bread
- 8 slice Bacon
- 4 oz Cheddar cheese
- 4 oz Provolone cheese
- 2 Tomato
- 4 tbsp Butter
- 2 tbsp Mayonnaise (optional)
Steps
- Cook bacon in a large skillet over medium heat until crispy. Remove bacon, drain excess fat, and set aside on paper towels.
- Slice tomatoes and grate cheeses if not already shredded.
- Butter one side of each bread slice. On the unbuttered side of four slices, layer cheddar cheese, cooked bacon, tomato slices, and provolone cheese.
- Top with the remaining four bread slices, butter-side up.
- Heat the same skillet (or a clean one) over medium-low heat. Place sandwiches in the skillet and cook for 4-5 minutes per side, or until golden brown and cheese is melted and gooey.
- Remove from skillet, let cool slightly, then slice in half and serve immediately.
