Grilled Mac and Cheese Sandwich
This ultimate comfort food combines creamy macaroni and cheese with a classic grilled cheese sandwich, creating a crispy, cheesy delight.
Ingredients
- 8 oz macaroni
- ⅓ cup all-purpose flour
- ¾ tsp mustard powder
- 1½ tsp garlic powder
- ½ tsp kosher salt
- ½ tsp black pepper
- ⅛ tsp cayenne pepper
- 10 tbsp butter
- 1½ cup whole milk
- 1 cup heavy cream
- 1 lb Monterey Jack cheese
- 16 slice square bread
- 8 slice mild cheddar cheese
- 8 slice Colby Jack cheese
Steps
- Cook macaroni according to package directions until al dente; drain and set aside.
- In a small bowl, whisk together flour, mustard powder, 0.5 tsp garlic powder, salt, black pepper, and cayenne pepper.
- Melt 6 tablespoons butter in the pasta pan over low heat. Whisk in the flour mixture and cook for 1 minute until fragrant.
- Gradually whisk in milk and cream, cooking until the sauce thickens slightly. Remove from heat, then stir in Monterey Jack cheese until melted. Add the cooked macaroni.
- Spread the mac and cheese evenly on a parchment-lined baking sheet and refrigerate until firm, about 1 hour.
- Heat a large skillet over medium-low heat. Spread 1.5 tablespoons butter and 0.5 tsp garlic powder on one side of each bread slice.
- Assemble sandwiches with a slice of cheddar, a portion of chilled mac and cheese, and a slice of Colby Jack between two slices of buttered bread.
- Grill sandwiches for 3-5 minutes per side, or until golden brown and cheese is melted.
