Ingredients

  • 8 oz macaroni
  • ⅓ cup all-purpose flour
  • ¾ tsp mustard powder
  • 1½ tsp garlic powder
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ⅛ tsp cayenne pepper
  • 10 tbsp butter
  • 1½ cup whole milk
  • 1 cup heavy cream
  • 1 lb Monterey Jack cheese
  • 16 slice square bread
  • 8 slice mild cheddar cheese
  • 8 slice Colby Jack cheese

Steps

  1. Cook macaroni according to package directions until al dente; drain and set aside.
  2. In a small bowl, whisk together flour, mustard powder, 0.5 tsp garlic powder, salt, black pepper, and cayenne pepper.
  3. Melt 6 tablespoons butter in the pasta pan over low heat. Whisk in the flour mixture and cook for 1 minute until fragrant.
  4. Gradually whisk in milk and cream, cooking until the sauce thickens slightly. Remove from heat, then stir in Monterey Jack cheese until melted. Add the cooked macaroni.
  5. Spread the mac and cheese evenly on a parchment-lined baking sheet and refrigerate until firm, about 1 hour.
  6. Heat a large skillet over medium-low heat. Spread 1.5 tablespoons butter and 0.5 tsp garlic powder on one side of each bread slice.
  7. Assemble sandwiches with a slice of cheddar, a portion of chilled mac and cheese, and a slice of Colby Jack between two slices of buttered bread.
  8. Grill sandwiches for 3-5 minutes per side, or until golden brown and cheese is melted.
