Grilled Pineapple and Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 whole fresh pineapple
  • ½ medium red onion
  • 1 medium bell pepper
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 2 clove garlic
  • 1 tsp ginger
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 wooden skewers (optional)

Steps

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. Cut chicken breasts, pineapple, red onion, and bell pepper into 1-inch pieces.
  3. In a bowl, whisk together soy sauce, honey, minced garlic, grated ginger, olive oil, salt, and pepper to create the marinade.
  4. Add chicken and vegetables to the marinade, tossing to coat. Let marinate for at least 15 minutes.
  5. Thread chicken and vegetables alternately onto the soaked skewers.
  6. Preheat grill to medium-high heat.
  7. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp and slightly charred.
  8. Serve immediately.
