Grilled Pineapple and Chicken
Sweet and savory grilled chicken and pineapple skewers, perfect for a summer BBQ.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 whole fresh pineapple
- ½ medium red onion
- 1 medium bell pepper
- ¼ cup soy sauce
- 2 tbsp honey
- 2 clove garlic
- 1 tsp ginger
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 8 wooden skewers (optional)
Steps
- If using wooden skewers, soak them in water for at least 30 minutes.
- Cut chicken breasts, pineapple, red onion, and bell pepper into 1-inch pieces.
- In a bowl, whisk together soy sauce, honey, minced garlic, grated ginger, olive oil, salt, and pepper to create the marinade.
- Add chicken and vegetables to the marinade, tossing to coat. Let marinate for at least 15 minutes.
- Thread chicken and vegetables alternately onto the soaked skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp and slightly charred.
- Serve immediately.
