Grilled Pork Chops with Peach Salsa

Ingredients
- 1½ lb boneless pork chops
- 3 peaches
- ¼ red onion
- 1 jalapeño (optional)
- ¼ cup cilantro
- 1 lime
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Steps
- Preheat grill to medium-high heat. Pat pork chops dry and season generously with salt and pepper.
- Dice peaches, finely chop red onion, and mince jalapeño (if using). Chop cilantro.
- In a medium bowl, combine diced peaches, red onion, jalapeño, and cilantro. Squeeze the juice of one lime over the mixture and stir to combine. Set aside.
- Brush pork chops lightly with olive oil. Grill for 4-6 minutes per side, or until internal temperature reaches 145°F (63°C).
- Remove pork chops from the grill and let rest for 5 minutes.
- Serve grilled pork chops topped with the fresh peach salsa.
