Ingredients

  • 1½ lb boneless pork chops
  • 3 peaches
  • ¼ red onion
  • 1 jalapeño (optional)
  • ¼ cup cilantro
  • 1 lime
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Preheat grill to medium-high heat. Pat pork chops dry and season generously with salt and pepper.
  2. Dice peaches, finely chop red onion, and mince jalapeño (if using). Chop cilantro.
  3. In a medium bowl, combine diced peaches, red onion, jalapeño, and cilantro. Squeeze the juice of one lime over the mixture and stir to combine. Set aside.
  4. Brush pork chops lightly with olive oil. Grill for 4-6 minutes per side, or until internal temperature reaches 145°F (63°C).
  5. Remove pork chops from the grill and let rest for 5 minutes.
  6. Serve grilled pork chops topped with the fresh peach salsa.
