Grilled Portobello Salad
A hearty and flavorful salad featuring marinated grilled portobello mushrooms, fresh greens, and a tangy balsamic vinaigrette.
Ingredients
- 4 Portobello mushroom caps
- 8 oz Mixed greens
- 1 cup Cherry tomatoes
- 1 Cucumber
- ½ Red onion
- ¼ cup Balsamic vinegar
- ¼ cup Olive oil
- 2 clove Garlic
- 1 tsp Dijon mustard
- ½ tsp Dried oregano
- ½ tsp Salt
- ¼ tsp Black pepper
- ½ cup Crumbled feta cheese (optional)
- ¼ cup Toasted pine nuts (optional)
Steps
- Whisk together 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, minced garlic, oregano, salt, and pepper to create the mushroom marinade. Brush portobello caps generously with marinade.
- Preheat grill to medium-high heat. Grill portobello mushrooms for 5-7 minutes per side, or until tender and lightly charred. Remove from grill and slice into strips.
- In a small bowl, whisk together the remaining 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, and Dijon mustard for the salad dressing.
- Wash and dry mixed greens. Halve cherry tomatoes, slice cucumber, and thinly slice red onion.
- Combine mixed greens, cherry tomatoes, cucumber, and red onion in a large salad bowl.
- Add grilled portobello strips to the salad. Drizzle with the balsamic vinaigrette and toss gently to combine.
- Serve immediately, optionally topped with crumbled feta cheese and toasted pine nuts.
