Grilled Portobello Salad

Ingredients

  • 4 Portobello mushroom caps
  • 8 oz Mixed greens
  • 1 cup Cherry tomatoes
  • 1 Cucumber
  • ½ Red onion
  • ¼ cup Balsamic vinegar
  • ¼ cup Olive oil
  • 2 clove Garlic
  • 1 tsp Dijon mustard
  • ½ tsp Dried oregano
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ½ cup Crumbled feta cheese (optional)
  • ¼ cup Toasted pine nuts (optional)

Steps

  1. Whisk together 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, minced garlic, oregano, salt, and pepper to create the mushroom marinade. Brush portobello caps generously with marinade.
  2. Preheat grill to medium-high heat. Grill portobello mushrooms for 5-7 minutes per side, or until tender and lightly charred. Remove from grill and slice into strips.
  3. In a small bowl, whisk together the remaining 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, and Dijon mustard for the salad dressing.
  4. Wash and dry mixed greens. Halve cherry tomatoes, slice cucumber, and thinly slice red onion.
  5. Combine mixed greens, cherry tomatoes, cucumber, and red onion in a large salad bowl.
  6. Add grilled portobello strips to the salad. Drizzle with the balsamic vinaigrette and toss gently to combine.
  7. Serve immediately, optionally topped with crumbled feta cheese and toasted pine nuts.
