Grilled Salmon Salad

Ingredients

  • 1½ lb salmon fillets
  • 8 oz mixed greens
  • 1 pint cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • 1 lemon
  • ¼ cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh dill (optional)

Steps

  1. Preheat grill to medium-high heat. Pat salmon fillets dry and season with 1/2 tsp salt and 1/4 tsp pepper.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, 1/4 tsp salt, and 1/4 tsp pepper. Squeeze in juice from half a lemon.
  3. Grill salmon for 4-6 minutes per side, or until cooked through and flaky. Let rest for a few minutes, then flake into large pieces.
  4. Halve cherry tomatoes, slice cucumber, and thinly slice red onion. In a large bowl, combine mixed greens, tomatoes, cucumber, and red onion.
  5. Add the grilled salmon to the salad. Drizzle with the vinaigrette and toss gently to combine.
  6. Garnish with fresh dill, if desired, and serve immediately.
