Grilled Salmon Salad
A light and flavorful salad featuring perfectly grilled salmon fillets over a bed of fresh mixed greens with a zesty vinaigrette.
Ingredients
- 1½ lb salmon fillets
- 8 oz mixed greens
- 1 pint cherry tomatoes
- 1 cucumber
- ½ red onion
- 1 lemon
- ¼ cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ¾ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh dill (optional)
Steps
- Preheat grill to medium-high heat. Pat salmon fillets dry and season with 1/2 tsp salt and 1/4 tsp pepper.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, 1/4 tsp salt, and 1/4 tsp pepper. Squeeze in juice from half a lemon.
- Grill salmon for 4-6 minutes per side, or until cooked through and flaky. Let rest for a few minutes, then flake into large pieces.
- Halve cherry tomatoes, slice cucumber, and thinly slice red onion. In a large bowl, combine mixed greens, tomatoes, cucumber, and red onion.
- Add the grilled salmon to the salad. Drizzle with the vinaigrette and toss gently to combine.
- Garnish with fresh dill, if desired, and serve immediately.
