Ground Beef and Black Bean Skillet
A hearty and flavorful one-pan meal featuring seasoned ground beef, black beans, corn, and bell peppers, perfect for a quick weeknight dinner.
Ingredients
- 1 lb ground beef
- 1 medium onion
- 1 medium bell pepper
- 2 clove garlic
- 15 oz canned black beans
- 15 oz canned corn
- 14½ oz diced tomatoes
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- ½ cup shredded cheddar cheese (optional)
- 2 tbsp fresh cilantro (optional)
Steps
- Dice the onion and bell pepper. Mince the garlic. Drain and rinse the black beans and corn.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
- Add onion and bell pepper to the skillet and cook until softened, about 5-7 minutes. Stir in minced garlic, chili powder, cumin, salt, and pepper; cook for 1 minute until fragrant.
- Stir in the drained black beans, corn, and diced tomatoes (undrained). Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, allowing flavors to meld.
- Remove from heat. If desired, sprinkle with shredded cheddar cheese and cover for a few minutes until melted. Garnish with fresh cilantro before serving.
