Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 1 medium bell pepper
  • 2 clove garlic
  • 15 oz canned black beans
  • 15 oz canned corn
  • 14½ oz diced tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup shredded cheddar cheese (optional)
  • 2 tbsp fresh cilantro (optional)

Steps

  1. Dice the onion and bell pepper. Mince the garlic. Drain and rinse the black beans and corn.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5-7 minutes. Stir in minced garlic, chili powder, cumin, salt, and pepper; cook for 1 minute until fragrant.
  4. Stir in the drained black beans, corn, and diced tomatoes (undrained). Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, allowing flavors to meld.
  5. Remove from heat. If desired, sprinkle with shredded cheddar cheese and cover for a few minutes until melted. Garnish with fresh cilantro before serving.
