Ground Beef and Cornbread Casserole
A hearty and comforting casserole featuring seasoned ground beef topped with a golden, savory cornbread crust.
Ingredients
- 1 lb ground beef
- 1 medium yellow onion
- 2 clove garlic
- 14½ oz canned diced tomatoes
- 15 oz canned corn
- ½ cup beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
- 8½ oz cornbread mix
- 1 egg
- ⅓ cup milk
- ½ cup shredded cheddar cheese (optional)
- 2 green onions (optional)
Steps
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
- Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in diced tomatoes (undrained), drained corn, beef broth, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
- Pour the beef mixture into a 9x13 inch baking dish.
- Prepare the cornbread mix according to package directions, typically by combining with egg and milk. Spread the cornbread batter evenly over the beef mixture.
- Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean. If desired, sprinkle with shredded cheddar cheese during the last 5 minutes of baking.
- Let stand for a few minutes before serving. Garnish with chopped green onions, if using.
