  • 1 lb ground beef
  • 1 medium yellow onion
  • 2 clove garlic
  • 14½ oz canned diced tomatoes
  • 15 oz canned corn
  • ½ cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8½ oz cornbread mix
  • 1 egg
  • ⅓ cup milk
  • ½ cup shredded cheddar cheese (optional)
  • 2 green onions (optional)

Steps

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in diced tomatoes (undrained), drained corn, beef broth, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
  5. Pour the beef mixture into a 9x13 inch baking dish.
  6. Prepare the cornbread mix according to package directions, typically by combining with egg and milk. Spread the cornbread batter evenly over the beef mixture.
  7. Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean. If desired, sprinkle with shredded cheddar cheese during the last 5 minutes of baking.
  8. Let stand for a few minutes before serving. Garnish with chopped green onions, if using.
