Ground Beef and Noodle Skillet

Ingredients

  • 1 lb ground beef, 80/20
  • 8 oz egg noodles, wide
  • 1 medium onion, yellow
  • 2 clove garlic
  • 14½ oz diced tomatoes, canned
  • 2 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ cup cheddar cheese, shredded (optional)
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tbsp olive oil

Steps

  1. Chop the onion and mince the garlic. In a large skillet or Dutch oven, heat olive oil over medium-high heat.
  2. Add ground beef to the skillet and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic, tomato paste, Italian seasoning, salt, and pepper, cooking for 1 minute more until fragrant.
  4. Pour in the diced tomatoes, beef broth, and Worcestershire sauce. Bring the mixture to a simmer.
  5. Add the egg noodles to the skillet, stirring to submerge them in the liquid. Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
  6. Remove from heat. If desired, stir in shredded cheddar cheese until melted. Garnish with fresh parsley, if using, and serve hot.
