Ground Beef and Rice Skillet

Ingredients

  • 1 lb ground beef, 80/20
  • 1 medium yellow onion
  • 3 clove garlic
  • 14½ oz canned diced tomatoes
  • 2 cup beef broth
  • 1 cup uncooked long-grain white rice
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ cup cheddar cheese, shredded (optional)
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tbsp olive oil

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  2. Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic, oregano, salt, and pepper, cooking for 1 minute more until fragrant.
  3. Stir in tomato paste, diced tomatoes (undrained), beef broth, Worcestershire sauce, and uncooked rice. Bring the mixture to a boil.
  4. Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  5. Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork.
  6. If desired, sprinkle with shredded cheddar cheese and chopped fresh parsley before serving.
