Ground Beef and Rice Skillet
A comforting and quick one-pan meal featuring seasoned ground beef, tender rice, and a savory tomato sauce.
Ingredients
- 1 lb ground beef, 80/20
- 1 medium yellow onion
- 3 clove garlic
- 14½ oz canned diced tomatoes
- 2 cup beef broth
- 1 cup uncooked long-grain white rice
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- ¾ tsp salt
- ½ tsp black pepper
- ½ cup cheddar cheese, shredded (optional)
- 2 tbsp fresh parsley, chopped (optional)
- 1 tbsp olive oil
Steps
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
- Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic, oregano, salt, and pepper, cooking for 1 minute more until fragrant.
- Stir in tomato paste, diced tomatoes (undrained), beef broth, Worcestershire sauce, and uncooked rice. Bring the mixture to a boil.
- Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork.
- If desired, sprinkle with shredded cheddar cheese and chopped fresh parsley before serving.
