Ingredients

  • 1 lb ground beef
  • 8 oz medium pasta shells
  • 14½ oz diced tomatoes
  • 15 oz tomato sauce
  • 2 cup beef broth
  • 1 medium onion
  • 2 clove garlic
  • 1 cup cheddar cheese, shredded (optional)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  3. Add diced onion and minced garlic to the skillet with the beef. Cook for 3-5 minutes until the onion softens.
  4. Stir in diced tomatoes, tomato sauce, beef broth, dried oregano, salt, and pepper. Bring the mixture to a simmer.
  5. Add the pasta shells to the skillet, stirring to ensure they are submerged in the liquid. Cover and reduce heat to medium-low.
  6. Cook for 12-15 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  7. Remove from heat. If desired, stir in shredded cheddar cheese until melted. Let stand for a few minutes before serving.
  8. Garnish with fresh chopped parsley, if using, and serve warm.
