Ground Turkey and Rice Skillet
A quick and easy one-pan meal featuring savory ground turkey, tender rice, and a medley of vegetables.
Ingredients
- 1 lb ground turkey
- 1 medium yellow onion
- 2 cloves garlic
- 2 medium carrots
- 1 cup frozen peas
- 1 cup long-grain white rice
- 2 cups chicken broth
- 14½ oz diced tomatoes (optional)
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme (optional)
- 2 tbsp fresh parsley (optional)
Steps
- Dice the onion, mince the garlic, and dice the carrots.
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add onion, carrots, and garlic to the skillet. Cook for 5-7 minutes until vegetables soften.
- Stir in the uncooked rice, chicken broth, diced tomatoes (if using), salt, pepper, and thyme (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
- Stir in frozen peas and cook for an additional 2-3 minutes, until heated through.
- Remove from heat, fluff with a fork, and garnish with fresh parsley (if using) before serving.
