Ground Turkey and Rice Skillet

Ingredients

  • 1 lb ground turkey
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 medium carrots
  • 1 cup frozen peas
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 14½ oz diced tomatoes (optional)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)
  • 2 tbsp fresh parsley (optional)

Steps

  1. Dice the onion, mince the garlic, and dice the carrots.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  3. Add onion, carrots, and garlic to the skillet. Cook for 5-7 minutes until vegetables soften.
  4. Stir in the uncooked rice, chicken broth, diced tomatoes (if using), salt, pepper, and thyme (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
  5. Stir in frozen peas and cook for an additional 2-3 minutes, until heated through.
  6. Remove from heat, fluff with a fork, and garnish with fresh parsley (if using) before serving.
